Moon Fan (or is it Mun Fan?)

This is the classic Chinese-Mauritian fast food (good for when people need to get the airport on time and other such occasions). Let your rice cooker do the work for you!

Serves 4

2 cups rice (jasmine, brown, basmati...)
3 medium potatoes (peeled and cubed)
1 chicken breast (sliced thinly into "stir fry" pieces)
handful of shitake mushrooms (sliced, we use the dried kind but I'm sure fresh is fine)
3-4 dried scallops (soaked)
soya sauce, starch, water, salt...

Wash the rice and let it sit in the rice cooker with potatoes (don't turn it on yet!). Marinate chicken in starch and soya sauce. Pan fry chicken in light oil, add mushrooms and scallops (crumbled after they're done soaking), salt to taste. Add the mixture from the pan to your rice cooker. Fill rice cooker with water until you just see it peeking up through the ingredients. Turn rice cooker on, wait for it to cook and voila!

Mun fan is amazing with Satinee (Mauritian salsa). Chop finely (tomatoes, onions, chili peppers, coriander) add salt and pepper to taste.

Dear Foung,

Some people add chopped garlic and onion when they pan fry the chicken, mushrooms and dried scallops. For 2 cups of rice, 2 scallops are enough and I prefer dried Shitake mushrooms 'cos they are tastier.
