Pita Bread

4 cups all-purpose flour
1 1/2 cups water
2 tbsp. olive oil
1 tsp. salt

Sift flour into a large bowl. Add water, oil and salt. Stir together thoroughly to form a ball of dough. Cover with a wet towel and let rest for 30 mins.

Divide dough into 8 equal pieces. On a lightly floured work surface, roll each ball into a disk about 6" wide and 1/8" thick.

Heat large frying pan on medium heat for 3 mins. Add 1 pita and cook 1 minute. Press down with a spatula a few times. It will puff up. Do this for about 2 mins. or until lightly browned on the bottom. Turn the pita over and cook the second side, pressing down again until the top begins to separate from the bottom, creating a hollow middle. Transfer pita to a plate and cook the rest.
