Sweet Potato Corn Chowder
couple cloves
of garlic
1 onion
1/2 C. red pepper, carrot, cauliflower or any other veg you have in
your fridge that you want to get rid of
1/2 C. leeks
1/2 tsp thyme, marjoram, salt, pepper
1 C. corn kernels (defrosted frozen kernels are fine)
2 medium sweet potatoes
2 potatoes
3 cups water or soup stock (stock makes it tasty! even if it is veg.
oxo)
1 can coconut milk
1.
Sautee onion, pepper, leek, spices
2. add rest of veggies and sautee
3. add corn
4. add water/stock
5. mellow boil until cooked
6. when ready, add coconut milk last + salt, pepper to taste.
