Easy Peasy
I found out that ganache is as easy to make as it is fancy sounding . It's equal parts good chocolate and cream-I would say at least 18% milk fat.
Melt the chocolate (I like a combination of milk and dark) in a double boiler, add the cream, and whisk it to a silky consistency. Then pour onto your dessert and refrigerate until ready to serve. I made this yesterday morning and pooled it onto the surface of a cake I baked- even easier than frosting. Unless you are my friend Reesa, who makes the most insanely fluffy frosting ever. She's a pro bar none.

i bought the second fresh cookbook, "fresh at home", and there is this recipe in it for chocolate ganache:
1 cup semi-sweet diary-free chocolate chips
1/3 cup vanilla soymilk
1. melt chocolate chips in double boiler.
2. stir in soymilk as soon as chocolate chips have melted. remove from heat immediately when mixture is fully combined and smooth.
3. pour over dessert.
